Harvest
First Flush
In a wild growing section of southern Fujian Province, the bud and young leaves of the Mei Zhan plants are picked in early spring while still tender. The aroma and fragrance that this pristine ecosystem yields is incredible and shows up in this delicious tea.
Processing
The tea leaves are spread on cloth to wither for a few hours immediately after they are harvested. When they become soft enough, they are loosely rolled and then spread out to cool down for one or two hours. After they have cooled, the leaves are dried in an oven at around 150 F to lower the moisture content to under 7%.
