Brew with 195-210 degree F / 90-97 degree C water
Use 1 heaping tablespoon (3-4g) of tea per cup of water

Studies have shown that high quality white tea is the healthest tea, because it contains the most EGCG (catechins) and quercetin. Both have been studied extensively. Quercetin has been found to have powerful Anti-inflammatory properties.
Each tea "leaf" contains 2-3 leaves and one bud. This white tea tastes so good because of its crisp flavor and sweet finish.
"Every time that I go to our tea field on Tai Mu Mountain, it takes a long time to get to the field because it is such a secluded area and does not have a direct road. After a long car ride up the mountain, then I have to walk almost 30 minutes on a tiny path to get to the tea field. In addition to growing tea on Tai Mu Mountain, some farmers also grow herbs that Chinese doctors come and pick to use in herbal medicine. I see these herbs on my trek to the tea field and I like the smell."
